A blast from the past....I remember growing up on these. My mom and her family would make all kinds of pickles each summer. I found one of my moms old cookbooks where some of her recipes were published in it.
- 5qts, sliced cucumbers
- 6 med. white onions sliced
- 2 green peppers
- 2 garlic gloves
- 1/3 c coarse medium salt
- 5 cups sugar
- 2 cups cider vinegar
- 2 tsp tumeric
- 2 tsp celery seed
- 2 teaspoon mustard seed
Don't peal cucumbers, slice thin, add onions, peppers, whole garlic cloves, and salt. Cover with crushed ice and mix well. Let stand about 3 hours or longer. Drain well. Combing remaining ingredients. Pour over cucumber mixture. Heat just to a boil. Then pour into sterilized jars and seal. Makes 10 pints.
