Sweet Potato Salad with Chipotle Vinaigrette


  • small can of chipotle chiles in adobe sauce ( you only need the juice and 3-4 chipotles not the whole can)
  • 2pd of sweet potatoes
  • 1 cup of  olive oil
  • 1/4 pecan pieces
  • 1 bunch green onions
  • 1/4 cup dried cranberries
  • juice of one lime
  • 1 shallot
  • 1/2 tablespoon of honey
  • 2 tablespoons olive oil
  • 1 tablespoon sherry vinegar
  • salt and pepper to taste
  • 1/2 tablespoon of molasses
  • 1 garlic clove



Peal and slice sweet potatoes into 1/4 in thick cubes.  toss with olive oil, salt, and paper.  Bake in 325 degree oven for 15-20 minutes, till potatoes are tender.  While potatoes are cooling  mix chipoltes, lime, vinegar, honey, shallot, and molasses  in a blender. Mix well.  Once mixed add green onions, cranberries, and pecans to cooled sweet potatoes and toss with dressing.   Season with salt & pepper.
