Ingredients:
- small can of chipotle chiles in adobe sauce ( you only need the juice and 3-4 chipotles not the whole can)
- 2pd of sweet potatoes
- 1 cup of olive oil
- 1/4 pecan pieces
- 1 bunch green onions
- 1/4 cup dried cranberries
- juice of one lime
- 1 shallot
- 1/2 tablespoon of honey
- 2 tablespoons olive oil
- 1 tablespoon sherry vinegar
- salt and pepper to taste
- 1/2 tablespoon of molasses
- 1 garlic clove
Directions:
Peal and slice sweet potatoes into 1/4 in thick cubes. toss with olive oil, salt, and paper. Bake in 325 degree oven for 15-20 minutes, till potatoes are tender. While potatoes are cooling mix chipoltes, lime, vinegar, honey, shallot, and molasses in a blender. Mix well. Once mixed add green onions, cranberries, and pecans to cooled sweet potatoes and toss with dressing. Season with salt & pepper.
